Different Types of Ovens Used in Commercial Kitchens

Food & Beverages
A commercial oven is an important component of the commercial kitchen. It is used for heating and baking foods in the professional setting. Different establishments like the restaurants, bakeries, and cafeterias are often equipped with these ovens. This is because these ovens have the capability to deal with large quantities of food in a timely manner. There are different types of commercial ovens that are available. This would accommodate the requirements of the menu and the services. For example, there is the deck, pizza and even the combination ovens. The ovens can be fueled with gas, electric or wood and it cooks with the help of convection.

A part of all Commercial Kitchen, the commercial oven would bake with the convection purpose. In the cooking terms, the convection can be described as the method where the heat is transferred and the food is heated with the help of hot air circulated by the fan. For example, the movement of boiling water in the pot is the method of convection. In the oven, the convection would use different heating elements to radiate the heat; the fan installed would ensure faster and consistent cooking. Most chefs and bakers prefer these two attributes.

Most of these professional ovens are found to use gas for cooking. This is because gas would tend to heat an oven quickly and enable easy maintenance of the temperature. This would keep the utility costs down. The electric powered ovens would take much longer to reach the preferred temperature. There are ovens that would burn wood for the heat and add a unique flavor to it. The smell and flavor leads to a heavenly gastronomic experience.

There are different kinds of commercial ovens that are available in the market. Each is devised to meet the particular needs of the kitchen. The most important type is the deck oven, which have a large interior with multiple racks inside. These racks can be adjusted to accommodate multiple dishes all at once. Finding the appropriate oven is important for several factors. The most important is that the heat does not escape. This would lower the temperature of oven. Whenever the door is opened to baste, add or take out the dishes the temperature would be affected. There are particular foods, like baking bread that can be ruined if the temperature fluctuates in any way. The professional deck ovens are designed to ensure that the interior chamber maintains the temperature accordingly.

Another kind of oven that is found in the Commercial Kitchen is the combination oven. These would have the option to either to cook with one or apply both the methods. This would enable cooking of vegetables with meats and other foods. If the chef needs to cook the dish with multiple flavors, it is important to look for models that would inhibit the transfer of flavors between each of the dishes.

The third most common type found in the restaurant business is the pizza oven. This is specifically designed for the cooking of pizza in commercial way. These are ovens with very high temperatures. The pizza ovens may look similar to the ones with normal oven; some may even have a conveyor belt. The chef or the cook should be able to manage the speed of the belt and thereby control the amount of time that the pizza wounds up in the oven. Large chunks of meat can be cooked easily in the ovens and frozen foods can be easily defrosted.

Sometimes these ovens can be stacked on top of another. This would utilize the vertical space and facilitate the use of ovens all at once. If anybody is thinking of purchasing the oven, it should be ensured that the ovens comply with the various safety regulations before their installation in the kitchen.
