Main Ingredient of Thai Green Curry - Curry Paste

Thai green curry is one of the most famous Thai recipe. In Thai language it is known as “Gaeng Keaow Wan” means sweet green curry but you can make it as sweet as well as spicy. It is generally prepared from green curry paste that can be purchased from market or prepared at home but today people prefer to use packaged curry paste as it is take less time for preparation and cheaper to buy. Thai green curry is generally involves in heating up of coconut milk or cream then adding the paste, salt, sugar and other ingredient like vegetables, chicken or seafood. There are many types of of curry paste available in market but there is only one type of authentic curry paste, which is made from scratch using herbs and fresh ingredients, then grinding it with a mortar and pestle.

Basic ingredients of Thai green curry paste are coriander seeds, coriander roots, cumin, peppercorns, lemon grass, garlic, lime, shallots and shrimp. These dry ingredients are heated up in a frying pan or in a wok then grinned with pastel and mortar to make it fine powder. Some people use food processor to grinned these ingredients and make a thick paste and store it in a freezer so that you don't need to make it every time whenever they cook curry. When you cook curry add some coconut milk to make it thin. This curry paste can be stored for about 3-4 weeks in freezer.

Some people go to restaurant to eat authentic Thai green curry because they expect the restaurants make their own curry paste. But that is not happens, the problem is that some cook has lack of skills, some restaurant can not afford to hire Masterchef so if the cook make their own paste it does not taste as well as packaged paste therefore they prefer to use packaged curry paste. Other reason is the lack of time because to prepare authentic curry paste you need lots of time and no one has so much time to make curry paste.

Also in these time everything is become very fast and in this fast life people also want everything to be fast, no one wants to wait or spend time for anything else because today time is money. They just go in supermarkets, purchased packaged food, frozen food and processed food. That is not good for our health.
