I know its sounds like yucky health food but the zucchini bread is nothing like it. usually they are very moist and feels like Banana Bread But Only better. I found a lot of variation of the zucchini bread but as you already understood I'm baking them myself before recommending them for you. i will updated this Lens every time I'll find a great Zucchini Bread Recipe. Enjoy the Moist :)

Zucchini Bread Recipe I really enjoyed this bread, Fantastic! Nice and moist, I left out the nuts and used a 3/4 C less sugar. Great texture !!

Ingredients - 2 1/2 cups sugar - 3 eggs - 3 cups flour - 3 teaspoons vanilla - 1 cup oil - 2 cups zucchini, grated - 1/4 teaspoon salt - 1 teaspoon baking soda - 1/4 teaspoon baking powder - 1 cup nuts (optional) - 3 teaspoons cinnamon

Directions - Preheat oven to 350 F degrees. - Combine all ingredients. - Pour into two greased loaf pans. - Bake for one hour.

Zucchini Bread Recipe This One I Shared With My Kids And I Was Excited To See Them Eating This Zucchini Bread so enthusiastically.

Ingredients - 3 eggs - 2 cups sugar - 1 cup oil - 3 cups flour - 1 teaspoon salt - 1 teaspoon baking soda - 1 teaspoon baking powder - 2 teaspoons vanilla - 3 cups zucchini, grated, raw and unpeeled - 1 teaspoon cinnamon - 1 cup walnuts, chopped (optional)

Directions - Beat together eggs, sugar, and oil. - Add the other ingredients, beating well. - Pure the mix in to two oiled and floured loaf pans. - Bake at 350 F degrees for about 1 hour.

Zucchini Bread Recipe-Gluten Free Healthy Recipe :-)

Ingredients - 3 eggs - 2 cups sugar - 1/4 cup canola oil - 1/4 cup unsweetened applesauce - 1 teaspoon vanilla extract - 1 1/2 cups cornstarch - 3/4 cup rice flour - 3/4 cup tapioca flour - 1 tablespoon xanthenes gum - 1 tablespoon cinnamon - 1 tablespoon baking powder - 1 teaspoon baking soda - 2 cups fresh zucchini, grated - 1/2 cup walnuts (optional)

Directions - Preheat oven to 350 F degrees. - Beat the eggs until foamy, adding sugar, oil, and applesauce (use wire whip attachment for mixer). - In a separate bowl, mix the dry ingredients and then add them to the egg mixture - Switch to the flat beater or dough hook attachment and beat in electric mixer for about 3 minutes or until batter is mixed well and becomes very Thick then Add nuts. - Grease two large loaf pans and fill each 1/2 full. - Bake for approximately 1 hour and 10 minutes till the middle is cooked through. - If your oven cooks the tops of these loaves too quickly, Cover with aluminum foil to prevent burning (after about 25-35 minutes). - If you want to use this as breakfast bread, you can sprinkle the tops with Confectioner's sugar.

Low-Fat Banana Zucchini Bread Think Banana Bread But With A Twist

Ingredients - 1 cup white flour - 1 cup wheat flour - 1 cup rolled oat (Quaker Old Fashioned Oats) - 1 1/2 teaspoons baking powder - 1 1/2 teaspoons baking soda - 1 1/2 teaspoons cinnamon - 1/4 teaspoon ground allspice - 1/4 teaspoon freshly ground nutmeg - 1 teaspoon salt - 4 eggs (or Egg Beaters to cut some calories) - 1 1/4 cups white sugar - 1/4 cup oil - 1/2 cup applesauce - 2 medium overripe bananas, mashed (the riper, the sweeter) - 1 teaspoon vanilla - 2 cups shredded zucchini - 1 cup raisins (or dates or walnuts)

Directions - Preheat oven to 350 F degrees. - Whisk together white flour, wheat flour, oats, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt. - In a separate bowl, beat the eggs. - Add the sugar, oil, applesauce, and mashed bananas to the eggs; mix well and Add the vanilla. - Combine the wet and dry mixtures. Stir until just combined. - Fold in the zucchini and raisins. - Pour into 2 lightly greased loaf pans (9x5-inch). - Bake for 45-50 minutes or until a knife comes out clean.
