Prawns stuffed with crab meat is very popular because they are very quick to cook and exotic to eat. Many recipes revolve around these two ingredients. One of the more popular versions of crab stuffed shrimp recipe is butterflied prawn with crab meat stuffing. This dish looks very beautiful and can be served as an starter as well as a main course. Time required to cook this crab stuffed shrimp recipe is approximately an hour. Ingredients Jumbo prawns: 20 (fresh, shell-on, each around 60g) White crab meat: 100 g Sunflower oil: 1 tablespoon Onion: ½, finely chopped Green pepper: ½ , finely diced Celery: 1, trimmed and diced Butter: 40 g Garlic: 2 cloves, crushed Seasoning: to taste White breadcrumbs: 50 g dry (for this crab stuffed shrimp recipe you may also use crushed crackers) Mayonnaise: 50 g Lemon: ½, finely grated zest Parsley: 2 tablespoon chopped Lemon wedges: to serve Cooking Directions Heat oil in a pan and fry onion, pepper and celery over low heat, till they turn soft. Once soft, put around 10 g of butter into the cooking pan, also add garlic and seasoning and cook for 2 minutes. Make sure you stir it constantly or the butter might burn. Once done, remove it from the heat and add the breadcrumbs. Let it rest for 15 minutes, while you preheat the oven at 200 degrees. Now, to prepare the butterflied prawns, rinse it thoroughly and remove the head and shell except the tail. Once peeled, cut the prawn from the back almost all the way through, be very careful while doing it, you will have to remove the intestinal track and open it up as flat as possible. Now that your breadcrumb mixture has cooled down, add the crab meat, mayonnaise, parsley and lemon zest into it. Add salt to taste. Put this mixture on top of the butterflied prawns and bake them in the preheated oven for 10 – 12 minutes. Once they are baked, the stuffing will look golden brown and the prawns will be pink. For the final touch, heat the remaining butter and seasoning in a separate pan and add on top of the baked prawns. Once ready, serve with wedges of lemon.
