In Ontario fall is the season we take time to celebrate a bountiful harvest. From pumpkins and gourds to beets and broccoli local producers supply us with nutritious food. We celebrate by appreciating the food that farmers work so hard to produce and making sure that every part of the harvest is used. Fall is a time for comfort food. We celebrate our bountiful harvest with delicious recipes that showcase the fresh produce, such as, savory pies and hearty stews. What better way to honor our local producers than to use their food to fill our families. Thanksgiving in particular is a time when families get together for a lavish dinner that uses much of the fall produce in pumpkin pies, mashed sweat potatoes and corn on the cob. Making sure a bountiful harvest does not go waste is as important as growing the harvest itself. A few suggestions for lowering the 27 billion dollar concern of food waste in Canada would be using by the harvest as a donation, decoration or by preserving it. If you simply have more food than you eat, consider donating it to a local food bank instead of letting it go to waste. Or, sell the produce and donate the proceeds to the many food drives which take place this time of year. The Mississauga Food Bank for example, hosts their largest annual food and fundraising drive during the fall and are in need of more support than ever this time of year. Squash, gourds and pumpkins can also be used as decorations. From center pieces to accents the fall harvest is featured throughout our homes, schools and workplaces. This is not only a great tradition for the season it also a terrific way to use parts of the harvest that would otherwise be wasted. For example, leftover corn stocks make a great frame for entranceways. There also many ways to use fall fruits and vegetables that are beginning to spoil. By discarding the portion of the food which has gone bad, the rest of the produce can be used to make excellent stocks or jams. Farmers will also use this portion of the harvest as animal feed. A bountiful harvest is a sign of fall and community that cares. Whether its giving back to those in need or using fresh fruits and vegetables in meals we need to celebrate a fall harvest by paying homage to the local producers that work long hard hours to give us the nutritious produce we crave this time of year.
