Cathy's Sweets, at http://cathyssweetstexas.com, grew from a strong desire to do something Cathy always wanted to do which was to make profession quality chocolate truffles. While Cathy was doing that, she became a self-taught Hill Country chocolatier. Now Cathy is making not only her signature truffles, but several different chocolate delicacies as well! Cathy makes 14 different kinds of truffles, chocolate bark, chocolate dipped oreo cookies, chocolate dipped ginger snaps and chocolate dipped peanut cookies. Each can be made with white chocolate, milk chocolate or dark chocolate and can be flavored with an assortment of different flavors. Founded in 2008, Cathy's Sweets kitchen is located in Lakehills, Texas, about 25 miles northwest of San Antonio. While in the famous Texas Hill Country, Cathy can create the chocolates that make the everyday customer sing praises to Cathy's Sweets. Over the last two years, Cathy has developed a relationship with several wineries and wine sellers. Pairing Cathy's Sweets chocolate truffles with various Texas wines is one of the best ways to enjoy both. You can find Cathy most Saturdays at Pedernales Cellars. On special occasions, Cathy can be found at Dry Comal Creek Winery in New Braunfels, Texas or the, Boerne WineSeller in Boerne, Texas. Cathy is asked all the time if wine and chocolate go together. The answer is YES, they do! Just try a piece of bittersweet dark chocolate with one of Texas Hill Country's port wines and you will see, taste and live in nirvana! For that matter, any dark chocolate with practically any red wine, preferably a cab or a semi-dry table red, is great. There is just something about wine and chocolate that is sinfully good. Her special “secret ingredient” that goes into each of these little jewels is truly unique and cannot be duplicated. To pair chocolate and wine is like taking a sip of a heavenly drink. Swirl a glass of wine and try to identify all the fruits, nuts, tannins and sweetness it has. Take a sip.
