I have always lived in the southwestern United States, so it's no wonder that one of my favorite types of cuisine is Mexican. But as I grew up and spoke with native Mexicans, along with Americans that had lived in worked in Mexico, the more I found out some of my favorite dishes were more commonly referred to as "Tex-Mex," or in other words, had more American influence than any of that south of the border. Now, as I have moved around throughout several southwestern states, I have realized that each area has its own distinct American influences. There will be subtle differences between main fare you will find in southern California as opposed to that which you might order in New Mexico. Sometimes, those unique flavors are as simple as separate blends of cheeses or the exact spices in which the meat is marinated. The similarities are more predominant, however, so if you generally enjoy the flavors of Mexican-American cuisine, you will likely find plenty to love from San Francisco to Denver, and virtually everywhere in between. If you are searching for a more authentic culinary experience, you are most likely to find them in urban centers, as many immigrants congregate there. Many legitimate culinary enjoyments in Mexico would not appeal to the average American (stink bug salsa, anyone?), but many restaurant owners are savvy about that and will offer a variety of dishes, some of which are more authentic than others. Of course, just as tastes vary across our country, they do across Mexico as well. A little research will help you pinpoint menus in restaurants that appeal to your specific interests.
